Fish that was in the sea this morning.

The fish comes in fresh off the day's boats, and we do not dress it up. Sardines, snapper, seabass and sea bream arrive whole, are cleaned in the kitchen, and go straight onto the grill with oil, lemon and a little salt. That is the whole secret, and it has not changed since 1978.
